What is it ?
We call it ‘Mama Nano's’. An Italian style vegetable ‘sauce’ almost beyond description. Wonderful as an appetizer, on sausages and burgers, with all kinds of seafood, in an omelet, on all kinds of pasta, as a bbq with chicken, beef and pork, in a taco or burrito, in a meatloaf... Is it 'spicy hot' ? Absolutely not! In fact, our 'Mild' versions of both the 'Vegetarian' and 'Traditional' have only enough spice to keep them from tasting 'flat'.... and the 'Zesty' versions are 'brighter', what we like to describe as 'just right spicy'... but by no means 'Hot'.
How long will it last? - Do I need to refrigerate it?
Unopened, it has an indefinite shelf life, as the pH level is low enough to keep it 'shelf stable'. Once you open it (if there is any left) its a good idea to refrigerate it... but we like to tell folks that the biggest 'hazard' is that someone will find it.. and leave you the empty jar! Actually, it refrigerates and even 'freezes' very well... and should be fine even if left refrigerated for months.
It tastes so good, it must be very fattening ?
Actually not! Only 90 calories in a 4 oz serving and only 5 grams of fat. There are 4 servings per pint.
How do you get the vegetables to be so 'crunchy'? The cooking process is done very quickly, with the entire batch reaching the boiling point in about 15 minutes, so the vegetables are not 'overcooked'.
How do you get so much flavor in it? The chemical action of the vinegar brings out a natural sweetness from many of the fresh vegetables, and the interaction of all the different ingredients is nearly magical. But that's part of the secret recipe!

(Vegetarian Recipe) * same as above, but without the tuna
Tuna ? You're kidding! I don't taste it ! Yes, 99% of folks don't know its there, even after you've told them. But that's just part of the way the flavors interact to create a real surprise ... you'll just have to taste it to understand :)
So which is better?, the 'traditional' or the 'vegetarian' ? You may find that a difficult choice! We'd suggest you try the 'vegetarian' first and discover the delightful Mama Nano's flavors and let your imagination run... as you think about the ways you might enjoy it! (one of my favorites is simply on a baked potato!) Then switch over to the 'traditional'... and you may be amazed at how, with just that one extra ingredient (light tuna) the flavors become even 'more' robust'! With a 'Mild' and 'Zesty' version of each style, you'll probably have a fun time deciding!
